Pudding for Breakfast!

So over the last two weeks I have been on, what regular people like to refer to as, "school holidays". Us folk in the biz know that it is anything BUT a holiday as we scramble to mark hundreds of assessment tasks, finalise term registers and throw together programs and lessons for the upcoming term. Granted the sleep-ins are nice. 7am starts are a far more acceptable time to greet the world! And having 5 minutes of down time each afternoon is a welcomed experience as well. So many people give us crap about getting weekends off, having so many holidays, knocking off at 3pm each day etc. To those people I say: I will hunt you down, I will find you and I will kill you! Liam Neeson styles! Teaching is the job that never ends, it comes home with you at night, it wakes up with you in the morning, it lingers in every co-curricular activity and school community day you've ever 'volunteered' to attend. If the job involved, planning and delivering lessons with the occasional assignment marking and reporting period you could sign me up a thousand times over. But it's the constant administrative follow up, professional development training. meetings about meetings, evaluations of teaching, additional skill development programming, co-curricular activity running, after-hours BS that makes it specifically designed for an elite group of insane people who accept, commit to and tolerate the outrageous expecations that are placed upon the shoulders of teachers. Well..... turns out I had a lot of frustrations to cast out on that matter. Anyway. my point is this: I'm a teacher suffering through all the aforementioned crap and amidst that I am also trying to run a business (or two or three), complete a postgrad masters in human nutrition and maintain some semblance of a normal life. So this morning I decided f*#k it. I'm having pudding for breakfast. Take care of yourselves people. Enjoy your downtime. Make time to enjoy your daily rituals and treat yourself to a divine one every now and then. xx Banana-Caramel Baked Oats Serves 1


1/2 banana, mashed

Cup of oats

1/2 tsp baking powder

tsp cinnamon

1 egg

Tbs nut butter

2-3 medjool dates

Splash of maple syrup

1/2 cup milk (any kind, I used hazelnut) Method:

1. Combine oats, baking powder and cinnamon in a bowl.

2. In a blender, blitz together egg, peanut butter, dates, milk and maple syrup 3. Combine wet ingredients with oat mix and stir well

4, Stir through mashed banana until combined

5. Pour into a ramekin and bake on 200 degrees celcius for 20-30 mins

6. Serve with remaining chopped banana and a drizzle of honey or rice malt syrup.
